Universally compatible, medium-sized frying pans, suitable for oven

We started with a list of 68 non-stick pans from retailers as varied as Williams Sonoma, Kmart, and Amazon, and then we limited ourselves to 10 to do a hands-on test looking for some basic criteria.

First, compatibility with all types of stoves, including induction. Second, the versatility that confers the fact of being safe for the oven. Author and “Kitchenware Geek” Liana Green of Liana’s Kitchen likes safe non-stick pans for the oven because, for example, you can brown steak on the stove and put it directly in the oven without having to transfer it to a baking tray. We also chose to try only the 10 and 11-inch plates. This is a good size to cook two fried eggs or a three-egg tortilla, but if you’re interested in more (or less), most of the models we try to come in a range of sizes, typically from 9 inches to 12.

Non-stick

Do you want to have a quick idea of ​​how good your non-stick pan is? Fry an egg in it. If you can fry an egg without the egg white sticking through the pan and with the yolk intact, you have a guardian. We heated each of our test trays for two minutes, then fry the eggs over low heat without adding oil or butter, specifically because we wanted to test the non-stick surface of the tray itself, without any additional lubricants. The same happens with our cornbread. Mix the dough and spread it in each non-stick pan without oil or butter. After 15 minutes in a 400-degree oven, we tested to see which one could release a wedge leaving the least number of crumbs or crusts.

Heat distribution

We did two tests to get a feeling of heat distribution. The first was to heat two cups of cold water over medium heat to see where those miniburves first appeared, and if there were hot or cold spots as the water heated up. We also tried 1-inch round eye steaks at medium-high heat to see if any casseroles were cooked hotter, or if they did not release meat as well.

The 10 pans handled the meat well – without sticking, and they all achieved the same rarity after six minutes – but some pans definitely burned the meat more than others. When we double-checked the temperature of each tray with an infrared thermometer, we saw a 135-degree temperature swing, but nothing that could cut a tray off the current.

Longevity

Non-stick pans are not inherited from cooking utensils. According to the author and developer of recipes Pamela Braun, “Three to five years is appropriate for the shelf life of a non-stick pan that is used regularly.” (He also noted, however, that “most people store their pans a lot, much longer than that.”)

The real test of a nonstick skillet is how it works in the long term, so we did our best to put a few years of use in a couple of days breaking all the rules of the nonstick skillet. We hit each tray against a concrete edge to see how easy it was to dent or deform the surface, and scraped metal forks through its surfaces to see if any scale was beginning to peel. Then we passed the 10 pans by an industrial dishwasher, including those that were “just to wash by hand”.

The best of the best

For us, the best non-stick cookware felt good to use, they passed all our cooking tests and had a price that did not make us feel uncomfortable. After a day in the test kitchen, we learned that not all non-stick cookers are created equally. Some are heavier than others; some have handles that stick in their hands or get hot while cooking, and some have surfaces that are harder to clean. It turns out that some are not even so anti-adherent.

How to find the right pan for your kitchen

Avoid non-stick cookware with textured cooking surfaces

Some non-stick pans come with textured surfaces, such as the Frieling Black Cube Fry Pan and the Circus Symmetry Hard-Anodized Nonstick French Skillet. It sounds a bit obvious, but we found that pots with textured surfaces were consistently less non-stick than pots with smooth surfaces – and experts agree. “A raised pattern in a non-stick pan negates its non-stick ability,” confirms Braun. “Food tends to cling to the texture, so a smooth bottom pan is ideal in this category.”

Why would a non-stick pan have a textured surface? In the case of the Frieling Black Cube pan, it may be so you can use metal utensils in the pan – a fact that Frieling announces prominently. The Frieling tray was the only one that passed the scratch test with a fork without any marks, so those surfaces are good for something!
